DIRECTIONS
Slice zucchini in half
lengthwise and then
chop into 1/2 inch
pieces.
Halve 1 pint
cherry tomatoes. Toss
with olive oil, salt,
pepper
and oregano.
Roast at 350 degrees
until tender,
about 45 minutes.
